How do I properly season and care for cast iron?

To season cast iron, wash it with soap and water (this is fine for initial seasoning), dry it completely, then apply a very thin layer of oil with a high smoke point like flaxseed, vegetable, or Crisco all over the pan including the outside and handle. Wipe off as much oil as you can so it's barely there, then bake it upside down in a 450-500°F oven for an hour. Repeat this process a few times to build up layers. For ongoing care, avoid soaking it in water or leaving it wet. After cooking, clean it while still warm using hot water and a stiff brush or chainmail scrubber. Dry it immediately on the stove over low heat, then apply a tiny amount of oil before storing.
