What causes food to spoil faster at room temperature?

At room temperature, bacteria, mold, and yeast multiply rapidly because the temperature falls within their ideal growth range, roughly 40°F to 140°F (4°C to 60°C). Microorganisms digest food and produce waste products that cause off-flavors, odors, and texture changes. Enzymes naturally present in food also remain active at room temperature, breaking down proteins, fats, and carbohydrates and accelerating decay. Additionally, oxidation occurs more quickly at warmer temperatures, causing fats to go rancid and nutrients to degrade. Refrigeration slows microbial growth and enzyme activity dramatically, which is why cold storage extends shelf life. High moisture content in food further accelerates spoilage by giving bacteria and mold the water they need to thrive.
