What is the difference between saturated and unsaturated fats?

Saturated fats have carbon chains where every carbon atom is bonded to the maximum number of hydrogen atoms, meaning no double bonds exist between carbons. This structure makes them solid at room temperature. They are found mainly in animal products like butter, meat, and cheese, and high intake is associated with increased LDL cholesterol levels. Unsaturated fats contain one or more double bonds between carbon atoms, which creates kinks in the chain and prevents tight packing, making them liquid at room temperature. Found in foods like olive oil, nuts, and fish, they are generally considered healthier. Monounsaturated fats have one double bond, while polyunsaturated fats have multiple, including essential omega-3 and omega-6 fatty acids.
