What is the proper way to season a cast iron pan?

To season a cast iron pan, start by washing it with soap and water, then dry it completely. Apply a very thin layer of oil with a high smoke point, such as flaxseed, vegetable, or shortening, all over the pan including the outside and handle. Wipe off as much oil as possible so only a barely visible layer remains, since too much oil will turn sticky. Place the pan upside down in an oven preheated to 450 to 500 degrees Fahrenheit, with foil on the rack below to catch drips. Bake for one hour, then let it cool in the oven. Repeat this process three to four times to build a strong, durable nonstick seasoning layer.
